With the integration of 3D printing in the culinary space that is fast advancing, we increasingly discover a number of companies that are willing to integrate a bit of digital manufacturing in their recipes. The latest one we found is Sugar Lab, a digital bakery founded in 2020 and run by a small team of rogue chefs, architects-turned-designers, and tech geeks in East Los Angeles.
With Culinary Printworks as a parent company, we discover at the heart of Sugar Lab’s creations a wide range of 3D designs for 3D printed food. More than just 3D designs, the company recently unveiled some glamorous cocktail garnishes, 3D printed in a blend of table sugar and Angostura bitters.
Sugar Lab’s own culinary expert Chef James Bickmore-Hutt developed the first-ever 3D printed bitters recipe. “3D printing with bitters brings function along with incredible forms because sugar and bitters are critical to so many famous cocktails. For Valentine’s, the team developed romantic engagement diamonds to adorn Champagne flutes with kaleidoscopic beauty.”
“This is just the beginning of what we can do in the cocktail and beverage space,” continues Bickmore-Hutt. “As we continue to innovate with sugar, bitters, and other on-trend and provocative botanical ingredients, we’ll develop our own cocktail recipes for home mixologists to whip up sensational drinks to impress and savor.”
The team believes that 3D printed bitters and sugar combine the best cocktail traditions as it brings more colors and ingredients to enjoy the beverage. Furthermore, to make it perfect with the upcoming Valentine’s Day, the company recently launched its line of 3D printed chocolate truffles and bonbons.
This time, Sugar Lab worked with Chef Melissa Walnock of the Culinary Institute of America to develop rich chocolate ganache recipes that are uniquely complemented by the 3D printed shells. With flavors ranging from refined to nostalgic, the truffles can pair with a champagne cocktail, an old-fashioned, or a favorite whiskey. Meanwhile, the bonbons feature throwback flavors such as s’mores and PB&J – perfect with an espresso or a glass of milk! The Valentine line also includes candies, cupcake décor, cocktail garnishes, and pastry shells that can be filled by any home chef with mousse, ice cream, or cake batter.
“After years of developing the Culinary Printer, we understand its potential better than anyone,” says COO Meagan Bozeman. “We’ve stepped out on our own with a concept we believe in and, more importantly, with people we trust, to start this business. Our goal is to make this amazing technology accessible to chefs and consumers around the world.”
